BBC The Food Chain: Why wheat making people sick?

Advice sought after:

I listen to and dictate BBC programs (podcasts) to deter and delay dementia. And oftentimes I come to words and phrases which I cannot catch. It would be appreciated if you can tell me what they are saying and also correct my incorrect catching in the attempted transcript.

Thanks in advance.

A biomarker is basically any measurable substance that can be an indicator of a biological state. Note that the biological could be a disease or could be a natural biological state, for example pregnancy.

This is Amon Ardini. He is an assistant professor of medicine at Colombia University Medical Center in New York City. And he told me that doctors use biomarkers all the time. In fact when a woman pees on the stick to see whether she is pregnant or not, the stick is looking for the presence of the biomarker of pregnancy. Or a doctor takes your blood. They might be looking for the biomarker of the disease, say, HIV or malaria. Now we don't have a biomarker for non-coeliac gluten sensitivity, and so Amon sets up to see if you could find one.

Well, just like any other biomarker, we look at part of the body that we suspect may be responsive to that type of sensitivity. The easiest and most perhaps traditional biological fluid is the blood, of course. So in the blood we have immune cells that react to things that we are exposed to or things that we eat. So the first thing we do will look at the blood.

He took the blood of 80 Italians who had problems with wheat. Some got bloated, others got diarrhoea, some got tired after they ate the grain. They had all tested negative of coeliac disease and ???(1)???. So seem like that they could be suffering from this new condition, non-coeliac gluten sensitivity.

So basically the blood of these patients express the inflammatory markers and these immune cells have been activated that we didn't see in other individuals also healthy, and we didn't it also in people who were not ingesting the wheat. In fact when these patients were put on a wheat free diets, these inflammatory markers went down and these immune cells went back to their normal state of not being activated.
